It’s that time again: eat everything in the fridge before leaving town for a week. We still had some leftover vegetables from last week’s box (a huge onion & three bok choys), and then knowing people were coming over for dinner, David picked up a more random things from Farmer Joe’s, including some nice golden beets. Having just had oral surgery, about the only food I could excited about was soup.

Chop and caramelize the very large yellow onion in olive oil. Add chopped golden beets, chopped garlic, some ginger (fresh would be preferable, but I only had powdered), some cinnamon, some chili flakes… Add water to start the souping. Chop up the bok choy, but save some of the leafiness for garnish later. Get it all cooking and add a can of coconut milk, plus some salt & pepper to taste.
