Yes, I have big sweet tooth. But I try to make healthy sweets! Really!! Well, mostly. Today I am 41.5 years old, and yes I celebrate my half birthday.
I made a few cupcakes for the occasion, based on a recipe in Chanterelle, which my brother Carl gave me for my birthday last year.
Brown Butter Cinnamon Cupcakes
In a small pan, brown 6 T butter with 1/4 vanilla bean. Let it melt and turn into buttery vanilla goodness. I let mine get quite dark, not intentionally, but oh well. It still tasted good. Pour the butter into a mixing bowl and refrigerate.
Take one egg and let it get to room temp. Mix together 5/8 c flour, 1 t cinnamon and 1 t baking powder. Measure 1/3 c milk.
When the butter has resolidified, whip it until it’s creamy. Add in 3/8 c brown sugar and keep whipping until creamy again. Add the egg and whip some more. Scrape down the sides and alternately add the flour and milk in thirds until it’s all mixed together and fluffy. Scoop about 1/4 c of batter into each of 6 cupcake cups. Bake for 30 min at 350F. Let cool completely.
For the frosting:
Melt 4 oz dark chocolate in a double boiler. Remove from heat and heat 1/8 c. cream. Add cream to chocolate and beat until shiny and smooth. Cool in refrigerator. Beat into cooled ganache 1/4 c butter and 1/4 c powdered sugar. Frosting should be thick, rich and creamy.
