Happy 123 easy as pie day!

I love pie. But I hate making crust. So with a can of pumpkin in the fridge, I made pumpkin pie muffins last night. Baking is a good way to heat up the house when you live in a warehouse…

Mix together:
~ 3 c. ready to use pumpkin
2 t. baking soda cinnamon, cloves, nutmeg, powdered ginger (as much as you like — i go light on cloves, but everything else I love)

Beat together until fluffy:
2 eggs
1/2 c. butter (1 stick)
1/2 c. white sugar
1/2 c. brown sugar

Stir in:
1 1/3 c. flour
1/2 c. bran
pumpkin mixture

Add in 2 T bourbon and 1/2 c. crushed almonds (I forgot for the first batch and just sprinkled them on top). Spoon into muffin tins with papers or greased. Bake at 325F for ~35 min.

Yummy, light and healthy!
