I love to travel. And I love to cook. But it’s hard to do both at the same time. Fortunately, I also love going to new and interesting restaurants, so in that case, traveling with my friends is fun because they all like good restaurants as well. However, when I’m traveling by myself, I like to housesit somewhere so I can cook and be comfortable, since most likely I’ll be working anyway. This trip to Montreal was perfect because the first two days David was here and we went out to eat for every meal, maximizing the experience. But since he left, I have cooked every meal at home. I can experiment, eat healthier and eat less, for a lot less money. And no one complains about it. Tonight is my last night, so I’m using up what’s left: a peach, an egg, milk, yogurt… Time for dessert!
1 peach, sliced and diced — originally i was going to make one dish, but it seemed so big next to my little peach… so i started with 2 baking cups, and the peach filled them up! Luckily, there was a third.
3 tsp butter — actually it was two sort of 1/2 Tablespoons, which i had cut in half for each dish thinking i’d put it at the bottom of the cup. but then i thought maybe better to mix it in with the peaches to cook them slightly. So each dish got two dabs of butter mixed in with the peachy bits.
~1/4 c sugar — i sprinkled a tiny bit on each cup of peaches and then put them in the oven at 400F to precook them, then put the rest into the mixing bowl along with:
~1/2 c flour
1 egg
~1/4 c yogurt
~1/4 c milk
nutmeg
granola (sans raisins)
mixed it all into a fairly thin batter… thinner than biscuits or even pancakes, but not quite as thin as crepes.
i was concerned that there wasn’t any baking powder….
at first i thought i had way too much batter, but after filling the first dish, i realized i didn’t even have enough for the second. after dividing it up, i figured it would just be a thin crust… but voila… after about 20 minutes, i got souffles!
They look *much* better than I thought they would!
The puffiness even held up! I can’t wait to taste it….
hmm, not bad. not super sweet, which is good. The crust is soft, sort of like a crepe, just a tad chewy but very moist and it encases the peaches. I love the nutmeg and peach flavor.
The cider, unfortunately, was not so great. The bottle was only C$7.50 after all. I also got a more expensive bottle of Canadian Ice Cider, which I thought I’d bring to Europe with us. However, that means checking my bag on Friday from BVT, to ORD, to FRA, to VIE, and then to FLR on Sunday. Stupid TSA.
